The Best Pancakes You'll Ever Eat

I love to cook, I got into it when I was about 15.  I started out obsessing over Giada De Laurentis cookbooks and cooking all the pastas I could read of as well as a lot of tomato capreses.  I even stole (don't tell anyone shhh) my high school french teacher's ancient french cookbook.  It has some amazing recipes in it that I'd classify as some of the best tasting recipes that I can make but that's for another time.  My mother hates cooking, so it always worked out that I made dinner.  Well one sunday morning earlier this year I got a craving for buttermilk pancakes and searched online for a good recipe.  The only one that came up that people were raving about was this Martha Stewart one.  I gave it a shot, and let me tell you, if you think IHOP has the best buttermilk pancakes, then you're wrong, because Martha does.  These baby's are awfully bad for you but deliciously amazing.  You can add chocolate chips, blueberries, raspberries, even make them low fat by using whole wheat flour instead of regular flour.  They're the boss, and I recommend you try them.  You probably have all the ingredients save for buttermilk which isn't hard to find.

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 2 large eggs, lightly beaten
  • 3 cups buttermilk
  • 4 tablespoons unsalted butter, melted, plus 1/2 teaspoon for griddle

  2. Very simple indeed! I sometimes put chocolate chips in but I'm sure they're delicious with blueberries!
